This weekend, my friends and I spent the better part of Saturday night preparing for, cooking, and eating a true summer meal. It consisted of poached swordfish, a pasta dish with scallops, mussels, eggplant, and loads more ingredients I can't remember, some cucumber salad, and wine. It. was. delicious. We may not have all been in agreement on our love of cooking ((Although I'm in love with the end product, I tend to think it's a ton of work), but we all unanimously agreed that the kitchen is the best part of a house. Ours was abuzz with activity this weekend. My sister was blessed with the culinary bug too....which is why I'm stealing some of her favorite summer recipes for today. I can't wait to try the fish tacos....
I bet we’ll be making a version of these with some Ten Mile Lake fish.
Other favorite lake recipes:
Toss russet potatoes (in 1-inch chunks) with slices of butter, chopped white onions, and Misty’s original seasoning. Spread on a 9×13 baking sheet covered in heavy-duty foil (or 2 layers of regular). Cut an equal length of foil for the “lid” and seal the edges together tightly. Grill for ~45 min, or to desired crispiness, turning the packet over midway through cooking.
She uses white onions or whatever’s fresh from the garden, and skips the vinegar.
