Taste and Terroirs: A Wine Tour de France

Though less well-known in name as Bordeaux or Burgundy, the vast Languedoc-Roussillon region makes up more than a third of France’s entire vineyard acreage and produces more wine than any other region in France. Over the last several decades, Languedoc-Roussillon winemakers have made some of the boldest innovations in production practices, experimenting with new varietals and forfeiting their appellation status to achieve the perfect blend. Mr. Vaidya introduces some of his personal discoveries among the area’s main, but often underrated, appellations.
