Where do you source your produce?
In Europe and overseas it’s easy to find fresh produce. There’s markets selling it everywhere, it’s no big deal. That’s not the case in the States. Mainstream America is about consumerism and with that comes this culture of mass produced, largely unhealthy food. I’m a fan of produce. Everything’s pretty local; Pennsylvania, New Jersey…We have farms delivering here every other day, so everything’s super fresh. Our chef is obsessed with plants. ‘Fresh’ is every third word to him. His objective is to maintain the product itself as much as possible, to respect the integrity of the ingredients.
