Your daily-changing menu is much needed fun on the restaurant scene. How far in advance are you deciding on dishes?

At the end of each service, we sit down and write the menu for the following day - it's a lovely way to end the day - thinking about what we cooked, and what we will cook the following morning. The menu is dictated by the season; what we find in the market that morning, the weather, or what we fancy for dinner ourselves!
