What it is: The larvae of ants harvested from the roots of agave and maguey plants in Mexico. We’re not telling you which genus of ants because we’re sure you’re still caught up on the fact that it’s the LARVAE OF ANTS. At least this time it doesn’t pretend to be cheese. Oh, wait: “They have a cottage cheese-like consistency and taste buttery, yet slightly nutty.” Only slightly nutty? What does that say about the person eating it? Apparently, the way to eat escamoles is with guacamole. What, not salsa verde?
