Restauranteur Emmanuel Verstraeten seeks to bring S.P.E. style of dining to New York, which translates to "health through food." Although an in-house nutritionist helps design the menu, this is not your ordinary health conscious restaurant. Its 15,000 square feet is purposely designed to be socially and environmentally aware, so you can dine without feeling guilt. Try the tasting menu served for the entire table.
