What: Neapolitan Ice-cream Shots What’s Cool About it: For the kid who could never pick a favorite flavor, Neapolitan ice cream is a long-standing summer favorite. Though they involve more steps than some of the other shots on the list, the layered look and popsicle stick addition give them extra flair and the ice cream adds a decadent twist. Ingredients: - 1/4 cup chocolate ice cream, melted - 1/4 cup chocolate liqueur - 3/4 cup vodka - 3/4 cup water - 1/4 cup vanilla ice cream, melted - 1/4 cup vanilla liqueur - 1/4 cup strawberry ice cream, melted - 1/4 cup strawberry schnapps - 3 envelopes unflavored Jello Instructions: - In a medium pan over low heat, combine the chocolate ice cream, chocolate liqueur, 1/4 cup vodka and water. - Add one envelope Jello, stirring until fully dissolved. - Pour into an 8 by 4-inch loaf pan and chill until set. - In a medium saucepan over low heat, combine the vanilla ice cream, vanilla liquer, 1/4 cup vodka, and 1/4 cup water. Add one envelope unflavored Jello stirring until dissolved. - Remove from heat and cool slightly. Pour the slightly cooled mixture over the chocolate layer and chill until set. - Repeat with the strawberry ice cream and strawberry schnapps, remaining 1/4 cup vodka, 1/4 cup water, and envelope of Jello, pouring over the vanilla layer once cooled. - Chill until set, cut and garnish with popsicle sticks.
