Can you say fish taco? In 2001, southern California native, Mark "Alberto" Holt established Sayulita Fish Taco, a small taco stand in the surfing village of Sayulita, Mexico. After 14 years, Holt moved back to southern California, changed the name to Say Fish Taco, and turned his concept into a food truck. The truck uses ingredients such as sautéed Mahi Mahi, blackened salmon, Asian-inspired fajitas, and tequila infused pork shoulder. Try the Fish Fajita with a combination of fresh garlic, oyster, soy sauce, and vegetables topped with guacamole or the Tequila Carnitas Burrito with tequila infused pork shoulder that's slow-cooked and topped with apple slaw.
