Shrimp Caesar Salad

Fig & OliveWHAT YOU'LL NEED Caesar Dressing 6 Tablespoons Mayonnaise 3 Tablespoons Extra-Virgin Olive Oil 2 White Anchovies, chopped 1 Tablespoon Fresh Lemon Juice 1 tsp Dijon Mustard ½ tsp Tabasco Sauce ½ tsp White Pepper ½ tsp Salt 1 Garlic, Clove, grated Focaccia Croutons 4 oz Focaccia 2 Tablespoons Extra-Virgin Olive Oil Salt and Freshly Ground Black Pepper Shrimp 16 Medium Shrimp 1 recipe Citrus Dressing Salt and Freshly Ground Black Pepper Citrus Dressing 2 Tablespoons Fresh Lemon Juice 2 Tablespoons Fresh Orange Juice 2 Tablespoons Fresh Blood Orange Juice ½ tsp Salt 5 Tablespoons Extra-Virgin Olive Oil Freshly Ground Black Pepper Salad 1 Tablespoon Extra-Virgin Olive Oil 2 Romaine Hearts, chopped ½ Cup Caesar Dressing 4 oz Parmesan Cheese, shaved LET'S GET COOKING Caesar Dressing Whisk all ingredients together and adjust the consistency with water. Focaccia Croutons Preheat an oven to 350 degrees. Cut the focaccia into ½-inch squares; lightly toss with olive oil, salt, and pepper and place on a rimmed baking sheet lined with parchment. Bake for 8-12 minutes or until golden brown. Cool before serving. Citrus Dressing Combine juices, salt, and pepper in a bowl. Slowly pour in the olive oil, whisking until emulsified. Shrimp Rinse shrimp under cold water and pat dry. Toss the shrimp in the citrus dressing. Set a sauté pan over medium heat and pour in the oil. Remove shrimp from the marinade and season with salt and pepper. Cook for 2 minutes on each side. Remove to a paper towel to drain. PLATE TO INSTAGRAM PERFECTION To assemble, place lettuce, croutons, ½ cup of the Caesar dressing, and parmesan in a bowl; toss. Place the salad on plates and top with shrimp and more parmesan.
