Sweet Potato, Corn, Kale Quinoa

If you haven't tried quinoa yet, now is the time. This delicious superfood can be mixed with a variety of ingredients for a healthy lunch. One excellent prepared lunch is a sweet potato, kale and corn quinoa. It will change your view on packed lunches and leave you feeling very satisfied. Follow instructions on the packaging to prepare the quinoa. Dice your sweet potatoes, leaving the skin on, and throw onto a hot pan with olive oil for around 7 minutes. Boil the corn for 2 minutes so that it retains its crunch. Lastly, slightly sauté your kale with a bit of olive oil. Mix all the ingredients together and you will have delicious, prepared quinoa for 2-3 meals.
