Farro Salad

Farro is a fiber-rich Italian grain that can be paired with a range of ingredients to make for a healthy and tasty meal. The grain is similar to a pasta flavor, but it has a crunch consistency that is simply delicious. One of our favorite combinations is a zucchini, mushroom and goat cheese farro salad. Cook the zucchini in a bit of olive oil, and the mushrooms in a table-spoon of butter. Once all of the ingredients are complete, mix them together in a bowl and top it off with a lemon-olive oil dressing and some goat cheese, making for a creamy texture. The recipe will make 2-4 servings, perfect for meals throughout the week!
