What's the number one mistake people make when they're cooking for a large group?

I’d say the way people follow a recipe, without adapting it to use the most seasonal and fresh ingredients.  Working with out-of-season ingredients, gives you a compromised flavor, so people use refined ingredients to enhance it, covering the natural integrity of the food, instead of celebrating it.  I like to be inspired by the most flavorful and seasonally fresh ingredients and create my dish from there.
