[The Deli Counter at Parm] Jeff: “Torrisi was first opened as a deli during the day and at night it would totally transform into a seven-course prefix menu. The sandwich deli concept we were housing under the same small roof as this other very different concept. And both were very successful, and basically the daytime became so successful that when a place opened next door, it warranted its own concept and home so we basically created Parm.” Why “Parm” “The most popular thing next door when we had just the sandwich shop was the chicken parm, so this was basically the house that Parm built. It seemed like the word Parm perfectly sums up the Italian American sensibility that we’re trying to get.”
