Here's What You'll Need:
3 tablespoons extra virgin olive oil or 1/4 cup veggie stock
1.5 pounds parsnips, peeled and cut into equal size chunks
2 stalks celery, small dice
1 large onion, medium dice
2 quarts veggie stock
1 bay leaf
1 cup cashew cream
1 granny smith apple, small dice
1 bunch parsley, minced
