What's the difference between diners in New York and diners in other places?

Diners in New York are much more willing to spend money on food and go out as opposed to LA or wherever else, where there's less of a dining culture. I think New York is the only place I would do this kind of concept because it's the only place that has a market for it. But you still get the same weird things that people don't eat. We have to accommodate everything. It just adds more things to the list of things that need to get done every day.
