What's the best thing you've learned since starting your career?

I think, especially in the culinary world, we are not going to please everyone and at the end of the day people are most receptive to something that feels authentic. If you're happy with it, then it is better than trying to make everyone else happy with it because then at least it's authentic.

Are you already thinking of opening your own restaurant?

Yeah. Hopefully soon, I mean or just turn this into it. I can already do whatever I want. But now I'm just going to go back to cleaning crab.
