Sam Ross is one of the best bartenders in the world. The former Milk & Honey man started his own bar this year, Attaboy, with partner Mickey McIlroy. The bar doesn't have a menu, so all you have to do is pick a spirit and let the maestro work.

"With the spring and summer coming up, I think the bitter, citrusy numbers are really good. Apertifs, digestifs, amari, different bitters...I think that sort of dry, citrusy bitterness is really applicable to the warmer weather. I think that the New York palette is becoming a little bit more sophisticated; You're getting a lot less of the..i dont know...the uneducated vodka soda, vodka Redbull people. People really are coming in and expecting different things, so it's just a matter of cateing to what i think is a slightly more advanced palette than what we've seen in previous years."
