Though Goldbar has been a staple of the New York club scene for years, Tim Cooper has brought another dimension to it by adding his skills behind the bar. The nationally-recognized bartender creates seasonal cocktails that appeal to even the most resilient gin-and-tonic customers.
"One of the trends I am seeing is the use of vinegar in drinks. I have a cocktail going on my spring menu with 'Raspberry Pok Pok Drinking Vinegar,' which is a drinking vinegar you can buy out at Pok Pok in Brooklyn. They have about 6 different kinds that are all delicious. They use them out at the restaurant at a 1:4 ratio. 1 being the vinegar and 4 being club soda. In my case, I'm using it more as a sweetener and extra layer of tartness."
