Bar Director Chris Cardone’s smokeshow boasts a creamy mouthfeel with notes of agave and bitter grapefruit, finishing off with bright citrus acidity and the smoky salinity of the mezcal. His inspiration: “I wanted to create an egg white cocktail that was autumn in a glass without using the stereotypical notes of apples, pears, and cinnamon. So I started off with equal parts tequila and mezcal to have a smoky yet powerful base that would be caressed by the egg white.” Three guesses who this one’s named for…I’m not biased, I swear.
