Some of your favorite restaurants you've looked to for inspiration?
We've been inspired by so many - the classics of course, but we've been lucky enough to have stumbled across some smaller regional restaurants in Provence and Italy which we love. In particular La Tamaris near Cavaliere and La Bastide de Marie and more recently, Cibreo in Florence and La Pinetta in Tuscany - we're still thinking about their Maltagliati with red mullet!
