The lobster is shipped directly from Maine. Owner Luke Holden was inspired to create this food truck after moving to NYC from his hometown Cape Elizabeth, a small town on the coast of Maine. Unimpressed with the way that vendors and restaurants were preparing and serving lobster, Holden decided to take matter into his own hands.
