Chicken and Veggie Stir Fry

stirfryIngredients/Instructions: Cut 1 pound chicken in small cubes.Marinate in sesame oil, low-sodium soy, garlic and ginger paste, honey, vinegar, siracha sauce, and chopped cilantro. Cook the chicken in a saucepan on medium heat. Cut up lots of veggies. Use one red pepper, one green pepper, scallions, snow peas, carrots, and broccoli. Add to saucepan when chicken is fully cooked. Combine the same ingredients needed to marinate the chicken & pour over the stir fry mixture to season veggies. Cook on medium for not much longer than 7 minutes to ensure the veggies stay crisp. Garnish with cilantro. Serve with white rice (moderation), brown rice, quinoa or other of your preference. [Photo and recipe via @alaaspantry]
