GazpachoThis recipe is completely raw and plant based – so it’s 100% guilt free! Cayenne pepper jumpstarts your metabolism, while bell peppers offer vitamins A and K for eye health and are chalk full of antioxidants. Did you know that humble parsley is a natural diuretic and powerful detoxifier? INGREDIENTS -3 medium vine ripened tomatoes, peeled, seeded, and chopped (about 3 cups) -1 large cucumber, peeled, seeded, and chopped (about 2 cups) -1 red, yellow or orange bell pepper, seeded and chopped (about 1 cup) -1 medium onion, finely chopped (about 11/4 cups) -2 tablespoons of parsley or cilantro chopped, plus extra for garnish -1/4 cup red wine vinegar -Juice of 1/2 a lemon -Kosher salt to taste -Cayenne pepper to taste DIRECTIONS 1. In a blender, purée all ingredients until smooth, adjusting the seasoning to taste with lemon juice, salt, and cayenne pepper. 2. Cover and chill thoroughly. Adjust the consistency as desired with water. Serve in chilled bowls garnished with a sprig of parsley and either dollop of Greek yogurt or a drizzle of olive oil.
