Flavor wise, what's in the soil doesn't make much of a difference if it's grown close and if it's fresh. But I encourage everyone to buy organic because you're only helping the planet. I get all deep like that. We have a responsibility. If someone can make money being organic, and we can support that, they're more likely to take that route, to be responsible users of our environment. There's not that many organic farms. Look for the sign. A lot of farmers have organic fields, and will farm as responsibly as they can - but they might not be able to be entirely organic in what they're producing.[Photo via Bea Helman]
