Nguyen has worked as a professional chef for nine years, opening his first restaurant in Brooklyn, Silent H, in 2006. After working alone for a few years, he partnered up with a friend to open Café Collette in Williamsburg. He then travelled to China, where he opened another restaurant before returning home to begin work at Selamat Pagi.
