‘Southeast Asian is a cuisine and always return to.’ He explains, ‘It’s so colourful, in flavour and aesthetics.’ Selamat was opened a couple of years ago by the team behind Van Leeuwen, the star of the New York ice cream scene. The three (consisting of Ben and Pete Van Leeuwen and Ben’s former wife, Laura), opened the restaurant in front of their ice cream-churning kitchen, inspired by a trip to Bali where they learned the essentials of Balinese cooking.
