Their start at Le BilboquetAymeric Clemente got his start as the maître d' at Le Bilboquet, where he took the Koch brothers under his wing. At the time, Daniel and Derek Koch were just starting out in the restaurant business, working as servers at the French bistro. With the help of Clemente, they quickly reinvented the notion of the Saturday party brunch.
