Chef & Partner Christopher Cipollone is serving up Roasted Sunchoke Agnolotti with a dough made from red wine and served with lardo and truffles; Tortellini stuffed with charred eggplant puree, garlic and ricotta cheese, topped with roasted chanterelle mushrooms and tomatoes; and his signature Bucatini, which adds an Asian accent to an Italian pasta dish with black garlic, Dungeness crab, maitake mushrooms and chilies.
