I understand you come from a large Filipino family: a big family, and very close-knit. How do you see that reflected in your food?
It’s definitely in my food. My food is about comfort, home cooking, and classic recipes. For me it’s about making people feel welcome. My mom’s house was a place where everyone would always gather and there was food on the table constantly, from morning to night. There was always fresh stuff in the oven, so I’m a firm believer in freshness, too. I make it a little difficult for myself I think, because I’m such a stickler about having fresh food and not freezing anything. I think a lot of desserts out there you’re not going to find coming right out of the oven. So, that’s my hope for this place. To be able to serve it super fresh.
