WHAT YOU'LL NEED 2/3 Cup coarse bulgur wheat 2 Tablespoons olive oil 2 Onions, finely chopped 1 lb Cavolo nero, finely shredded 1 Teaspoon ground cumin Juice of 1 lemon Salt and pepper
LET'S GET COOKING Soak the bulgur wheat in boiling water for 30 minutes, or as directed on the package. Drain well and set aside.
Heat the oil in a skillet or frying pan over medium heat. Add the onion and garlic and saute until soft but not browned.
Add the shredded cavolo nero and cumin to the onion mixture and saute for another few minutes.
Stir in the drained bulgur wheat, add the lemon juice, and season well before serving.
