You’ve had such an amazing, almost cultish response since opening. Do you think more about catering to vegans, or inspiring non-vegans to consider a more thoughtful, plant-based diet?

 Chloe: The feedback and excitement from everyone has been more than we ever expected. We’re so appreciative of everyone who comes in to try the food, and those who keep coming back to try more! It took us two years to come up with the menu and we wanted to provide simple, healthy, plant-based food that vegans and non-vegans could enjoy. That’s what’s so great about it – you don’t have to be vegan to enjoy it. If you just want a healthy salad or a lighter burger option, come on in and enjoy!
Sam: Opening day we had a line of people outside waiting to get in and Chloe didn’t believe me! I went running downstairs into the kitchen to tell her. The success has been incredible and extremely humbling. We are so grateful for each and every customer that walks through our door. So many of our early customers have become a part of our family! The best part, is that we’ve noticed that the majority of our customers are actually not even vegan! When we were taste testing dishes we had some of the biggest meat–eaters we knew come in to try items and we knew that if it could get the green light from their taste buds that we were good to go.
