You've just opened the 2nd Garret location, the Garret East, and you actually were a bartender yourself! How do you think cocktail culture has changed over the years?
I think that the cocktail culture has gone from being really highbrow to being somewhat like a medium-brow now. I think everyone kind of expects good cocktails anywhere they go. But I think at the same time, people are over that 'I’m going to sit and have a cocktail experience;' a lot of those times those places are really hard to get a seat at, they don’t allow for standing room, and they’re all secret and hidden. While one of our properties is like that, we try not to be a typical speakeasy that sets that kind of tone. People just want a little bit of fun matched with good quality. And that’s what we try to embody here.
