Booker and Dax, a part of Momofuku SSamm Bar and one of the newer bars in the city, uses modern techniques to create delicious drinks. Reminiscent of a chemistry lab, technology is behind every drink created. On cold nights, bartenders create flaming drinks using a 1,500 degree "red-hot poker" and for the warmer days ahead, rums get their fruitiness from an in-house centrifuge.
