How it’s Made: The ice that goes into any cocktail can make or break the drink (who knew!) The purity, size, and shape of each ice cube has an effect on the overall taste of the drink, and more and more bars are investing in ice machines so that they can make their ice in-house. Most standard ice machines produce a large block of ice every 3-4 days, and then it’s up to the owner to cut or shave it down into cubes.
