Shonky Donkey

A rummy variation of the Moscow Mule, this is the perfect drink for a hot summer afternoon. Or morning.

WHAT YOU'LL NEED
1 lime, cut into 8 pieces
1 small handful mint leaves
2 teaspoons sugar syrup
60 ml (2 fl oz/1⁄4 cup) spiced rum
100 ml (31⁄2 fl oz) ginger beer
Mint sprig and lime wedge, for garnish

Muddle the lime and mint in a cocktail shaker. Add the sugar syrup and rum, and 1 cup ice. Shake vigorously.

Pour the contents of the shaker into a copper mug or tall glass and add more ice if needed. Top up with ginger beer.

Garnish with fresh mint and a lime wedge.
