Can you give an example of how you've made a traditional recipe more modern? One very easy example is the Waldorf Salad. The Waldorf Salad is actually a salad that comes from the Waldorf Astoria here -- it's been invented by a Czech maître d'. Classically, it is celery root, apples, walnuts, and mayo. To make it a little bit lighter, I cut the mayo and use yogurt, put other herbs, make it a little bit more lemony, and make it with less calories. When I was a little girl, I loved Waldorf Salad, and it's something that a European person in America invented. [Photo via]
