Uncommon indeed, the Fries of New York exhibition now open to the public at 168 Bowery, offers carb-lovers a unique look at some of the city's most iconic, starchy specimens of potato-fried goodness. Hosted by artisanal condiment company, Sir Kensington's, the pop-up delves into the science and history of everybody's favorite drunk food, and like the residents and tastes of the city itself, it seems no two fries of New York are quite alike. Complete with frying oils in test tubes, a breakdown of seasonings, a map de frites, and a timeline of their expansion, the space immaculately displays fries from local staples, including The Smith, 21 Club, and Katz's Delicatessen.
