Describe your approach to food compared to other popular restaurants.
You see a lot of food in restaurants that is less subtle than ours. People use more flavors, more spice, more pizzazz. That’s another way of eating, one that I think is amazing. But what we’re doing here is a little bit different. It’s more about enhancing flavors that are already there. And it’s nice to treat our bodies well and put these natural things into them.
