What is it about Tribeca that appealed to you?

Hannah BronfmanWhat is it about Tribeca that appealed to you? We've had this space for probably about 2 years before we started with it because we were obviously doing other projects beforehand. This is one we took our time with and got right. We had to change some structural things here because I wanted to give the same types of experiences that we give in the other restaurants; when you're going to Nicoletta, you have a service staff that knows about the food. We have such educated consumers—look at Hannah [Bronfman]—we're talking about an age group that is very food forward. It's not just about the drink. It's about the experience, the food, and we want to give Eben fantastic bar food. It's where you can have a great steak or fried chicken. We want to eventually do take-out in this neighborhood.
