Did the far-reaching appeal of even carnivores come into play when creating the menu?

Very much so. There is a new style of eating emerging, what you might call accidental vegetarianism. Not everyone is ready to commit to becoming full-time vegetarian/vegan, but increasingly we see people who, without making a conscious decision, find themselves wanting to eat less animal proteins. Perhaps it’s meat every other day rather than every day. Perhaps it’s a steak once a month instead of once a week. We’re at the beginning of a trend that will prove revolutionary. Every informed person knows that it is better for their own health and the health of the environment to eat this way. Our job at Nix is to make this choice seem like a pleasure rather than a denial.
