Quinoa with Garlic, Pine Nuts, and RaisinsWhat You'll Need: 1 cup quinoa, rinsed well 1/4 cup pine nuts 2 tbs. olive oil 2 cloves garlic 1/4 cup raisins 1 tbs. fresh lemon juice salt and pepper to taste While the quinoa is cooking, toast the pine nuts in a skillet over medium heat until golden. Add the olive oil to the pan and add thinly sliced garlic. When quinoa is ready, add pine nuts, garlic, oil, parsley, lemon juice and raisins. Season with salt and pepper and toss. [Photo via]
