What made you so interested in food and nutrition?
I guess connecting to nature, and I think food is a really grounding element in life, it connects us to something very real, very primal. I wanted to go [to culinary school] and understand not only the body, but the mind. It was understanding the mind-body connection to food, rather than just body physical connection to food which is what nutrition is about. Eating psychology really got me to understand who we are as eaters, and how that affects the way we metabolize and digest and assimilate a meal because where you're at in your mind at a given moment will impact the way your body will respond and work.
