Chilled Corn Basil Soup

WHAT YOU'LL NEED
1 quart of fresh corn, cut off cob
1 quart of buttermilk
1 bunch of basil leaves
1 bunch of scallions
Juice of 1 lime
Salt & pepper, to taste
Extra virgin olive oil, to drizzle
Basil, for garnish

LET'S GET COOKING!
Place all of the ingredients in the food processor. Puree until smooth. Season with salt and pepper. Top each bowl with EVOO and basil.
