While Lounging Poolside...

    [Photo by Boodle] Eat This. Although it may look a little cliche, a flag cake is not only a personal favorite of mine but a must while celebrating the glorious 4th. I mean a 4th of July celebration without a flag cake is like celebrating Christmas without a Christmas tree. This recipe is relatively easy and always tastes great. For some added fun and wow factor, placing a few sparklers on the cake will be sure to gain a few ooh's and ah's from your party guests. The cake mix recipe is using a typical box cake.  If you have a family recipe for cake mix or frosting that you would like to share with us, please let us know because we would love to hear from you. Recipe and directions are below:

    INGREDIENTS:

    2 pints of strawberries

    1 recipe of white or yellow cake (mix or from scratch)

    1 1/3 c. of blueberries

    1 tub of whipped topping or icing

    1 18X13 rectangular pan

    DIRECTIONS:

    Mix up and bake the cake mix according to the box directions or your own recipe. Let cool.

    Dice up 1 cup of strawberries, set aside. Halve the remaining strawberries, set aside.

    Remaining in the pan, top the cooled cake with 1 cup sliced strawberries and 1 cup blueberries.

    Smooth the frosting or whipped topping atop the diced strawberries and blueberries.

    Arrange remaining strawberry halves and blueberries on whipped topping to create a flag design.

    Place the sparkler sticks into the top of the cake and light when ready to serve. Enjoy.
