While Lounging Poolside...

    Skewer This. The sun has finally come out and if have the free time today, you better be lounging poolside. Soaking up some rays might cook up a good appetite, but thankfully these Shrimp and Pineapple Shish Kebabs will be sure to hit the spot. They are super easy to cook and anything on a skewer is always fun to eat. The recipe is as follows:

    INGREDIENTS

    8 skewers

    48 peeled and deveined shrimp

    32 pieces of cubed fresh pineapple

    3 red onions, cut into 1 inch pieces

    3 cloves garlic, crushed

    SAUCE:

    1/4 cup low-sodium teriyaki sauce

    1/2 tsp. crushed red pepper flakes

    1 tbl. sesame seeds toasted

    DIRECTIONS

    Whisk together the teriyaki sauce, red pepper flakes, and toasted sesame seeds

    On each skewer evenly thread the shrimp, pineapple pieces, and red onion.

    Fire up the grill to medium heat.

    With a pastry brush, coat the kebabs with the teriyaki sauce mixture previously prepared

    Place the kebabs on the grill and cook until the shrimp are pink. Flip the kebabs after 4 minutes. Avg. cook time is approximately 8 minutes.
