Caesar Dressing

Focaccia Croutons
Preheat an oven to 350 degrees.
Cut the focaccia into ½-inch squares; lightly toss with olive oil, salt, and pepper and place on a rimmed baking sheet lined with parchment.
Bake for 8-12 minutes or until golden brown. Cool before serving.
Citrus Dressing
Combine juices, salt, and pepper in a bowl. Slowly pour in the olive oil, whisking until emulsified.
Shrimp
Rinse shrimp under cold water and pat dry. Toss the shrimp in the citrus dressing.
Set a sauté pan over medium heat and pour in the oil. Remove shrimp from the marinade and season with salt and pepper. Cook for 2 minutes on each side. Remove to a paper towel to drain.
PLATE TO INSTAGRAM PERFECTION
To assemble, place lettuce, croutons, ½ cup of the Caesar dressing, and parmesan in a bowl; toss.
