Apples - The Market Staple
In transition weeks, even when there's really no new crops, you'll always find potatoes and apples. The first apple can get picked around August / September depending on the type, but farmers store them to sell year round. Walking the market now, these apples obviously aren't picked in the spring. But when we do get freshly picked apples, we'll do them in a salad, just thinly sliced with greens and lemon. After that, we'll roast them. You have them for so long, you find the best ways to use them throughout the length of their shelf life.
