Scheduling Considerations
All of the chefs and restaurant people are here by 8. We probably pick everything up by 9, 9:30. People ask me so much what I'm going to do with what I buy. So maybe come early to ask the chefs what they're doing.
The best market days at Union Square are Wednesday and Saturday. For a home cook - once or twice a week, filling your basket with a lot of great stuff, is plenty to shop the green market. It's so fresh it will last.
To get in good with the farmers, try and build a relationship, talk up their product. Use their stuff. Tell them how delicious it was. Tell them how much you love something. They're busy, so don't be an ass. Just use them consistently, be nice, be ready with your money, and get in and out, it's all very easy.
