Spaghetti Carbonara
Spaghetti Carbonara is a classic italian dish, and while the process for making it seems simple, finding an authentic and perfectly prepared plate of this pasta in NYC can be a lot more difficult. We think the Carbonara at Mario Batali's Lupa Osteria Romana comes as close to perfection as you're going to get. The spaghetti is cooked perfectly al-dente, each strand evenly coated in the smooth and luscious sauce, with pieces of browned guanciale swimming throughout and just the right amount of black pepper to add an extra little kick.
