[Walls inside Torrisi] Mario: “We realized early on that it would be totally hypocritical to be this regional Italian thing when we all grew up in New York.” Rich: “We were writing menus for Italian type restaurants and we just got to a point where we were like ‘this is not us.’” Mario: “It wasn’t us. We thought, ‘Let’s go back and dig deeper and regurgitate our roots closer to home. We didn’t grow up with Italy Italian; we grew up mostly an American Italian. That is a particular voice and we took it and did something different with it.” Rich: “It is dramatically different.”
